The Experience

Massive onion bulb lamps, brass sconces and a thick stone spiral staircase hold clues to the building’s Victorian past. Bedrooms, not huge but well designed to make the best use of space, are pale and simple with good art, the means to make tea and coffee and a tiny fridge. Continental breakfast with homemade cake is served on a tray in your room, so you don’t even have to budge from your nest. Some have views over the cathedral, some the park and one is cosy in the attic.

The food, Italian inspired, is sublime. Everything is made from scratch, even their own vermouth; they do their own butchery, make their own bread and pasta, source very local produce and cook it with superb skill. The freshest set or tasting menus are designed to be shared and to make you feel happy. The wine list is small and good.

Stride out to discover the history on your doorstep, climb the hill to the top of the Necropolis for stunning views of the city.

I would stay here regularly even if I lived in Glasgow. You could have a superb lunch and dinner, get carried away with the cocktail and wine list, then clamber up to bed very happily. It's run the way a small hotel should be, with a laid-back warmth that belies the spectacular attention to detail and sheer love that's gone into every room and every dish.

The station is a 20-minute brisk walk and you're just a ten-minute walk from the centre – coming without a car would be easy. First stop must be the magnificent 13th-century cathedral, the oldest in mainland Scotland – book a tour to discover its history. There are world-class museums and galleries to discover and a wealth of wonderful cafés, pubs and restaurants. Choose from three theatres.
